An elegant and generous white wine. The acidity of Chenin, while still present and giving this wine a undeniable tonicity at first, is mildened by a partial malolactic fermentation and the maturation in old oak barrel (without distinctive oak aromas), offering a smooth feeling in mouth, with long lasting flavors of quince and honey. Tasting it in Patrick's atmospheric cellar directly from the barrel, its deep gold color and exquisite quality gave me the impression to be invited to share a secret preciously kept.

Definitely belonging to the more evolved Chenin, this wine will be best suited to freshwater fish recipes, as well as oven baked poultry or roasted veal carré, but could also very well simply accompany rillettes with fresh bread.

Number of bottles available for this Fall 2018 selection: 120 (only one 225l barrel of this wine exists!)
