Oxidative – Tropical – Rich

He farms organically and also draws on biodynamic principles; in the winery, he slowly hand-presses the grapes in a Calvados basket press to produce cider-esque and oxidative-style white wines.
We’re obsessed with Chenin Blanc and J-C does these so well. This pours a bronzey-golden yellow, with rich aromas of cut apples and ripe plums, with notes of sherry, beeswax and tropical fruits, and a crisp acid finish. Glorious.
Pair with: Chicken in cream sauce, artichoke pasta
