Over Domaine Jean Collet & Fils

Het domein Jean Collet werd opgericht in 1952 en later versterkte zoon Gilles het team. Het wijnhuis en de kelders bevinden zich in het hartje van Chablis. De wijngaarden liggen op de beste hellingen van de linker- en rechteroever van de Serein rivier. 37 Hectares zijn verdeeld over Chablis Grand Cru (0,51ha), Chablis Premier Cru (17,71ha), Chablis (16,4ha) et Petit Chablis (1,65ha). De filosofie van Domaine Collet & Fils is het bewerken van de wijnstokken volgens het lutte raisonnée principe, om zo de unieke terroir tot zijn recht te laten komen.

Vinificatie

Pneumatische persing. Alcoholische gisting en rijping in Bourgondisch eikenhout van 228L. gedurende 18 maanden.

Deze wijn past perfect bij kreeften, langoustines, rivierkreeften en edele vissoorten zoals tarbot en zeebaars. En kan ook samengaan met geroosterd wit vlees en geitenkazen.
