Nase
Der Sancerre »Les Chailloux« stammt von Böden mit einem hohen Silex-Anteil, der sich mit einer zarten Feuerstein-Note im Wein abbildet. Das leicht Feuersteinige ist aber nur ein Aspekt unter vielen und auch kein dominierender. Vielmehr reiht sich dieser Duft ein in Aromen von Maiglöckchen, Zitronen und Limetten, Weißen Johannisbeeren, einem Hauch von grüner Ananas sowie grünen Birnen.

Gaumen
Am Gaumen wirkt der Les Chailloux genauso präzise, hell und glockenklar wie im Duft. Es ist ein straffer, linearer Sauvignon Blanc, in der der Holzton keineswegs stört, sondern in seiner Feinheit das komplexe Spiel unterstützt, ohne es zu überlagern. Das ist ein tonischer, salziger, energetischer Wein mit vielen unterschiedlichen zitrischen Noten, weißfleischiger Frucht, Stein und Petrichor und gleichzeitig mit Noten von weißem Nougat und einer Spur Vanille. Das wirkt sehr komplett und sinnlich.

Informationen zum Wein
Die Lage Les Chailloux umfasst zwei Parzellen von insgesamt 0,6 Hektar in Südwestlage auf 250 Metern Höhe. Die Reben sind 40 bis 47 Jahre alt und wurzeln in einem Silex-Boden, der dem von Pouilly-Fumé nicht unähnlich ist. Die Trauben wurden von Hand gelesen, sortiert und danach sehr langsam pneumatisch gepresst. Die Klärung erfolgte kühl und durch Schwerkraft. Der Saft wurde spontan vergoren und reifte 14 Monate lang in Holzfässern aus Mehrfachbelegung auf der Hefe. Die Hefe wurde nur sporadisch aufgerührt. Stéphane Riffault vermeidet eine malolaktische Gärung.
